On-Campus Open Lecture "Tasting Real Dashi is a Cultivation in Tokyo” will be held.
Institute for SDGs Promotion, in collaboration with Japanese Culinary Academy , will hold a public lecture on campus to pass on the taste of traditional bonito and kelp dashi to the next generation.
After a lecture on the taste of dashi, chefs from five of Kyoto's leading ryotei (Japanese-style restaurants) will prepare dashi using their own recipes. Visitors will be able to compare the flavors and taste the soup with seasonal soup stock.
Would you like to taste the best dashi of Kyoto cuisine, the pinnacle of Japanese cuisine? Why not learn more about dashi, the secret taste unique to Japan, and broaden your palate with a taste that is rare in the world?
*Please note that people with allergies to crustaceans or eggs may not be able to enjoy this dish. Used in soup bowls.

【Program Contents】
1. "Understanding Dashi"
- A short lecture by a chef on the taste of dashi (15 minutes)
2. "Tasting Dashi"
- Demonstration by a chef on how to make dashi at a ryotei (Japanese-style restaurant) and tasting of the dashi.
Q&A and discussion will follow.
