"International Conference on Sustainable Green Diets to Save the World"

The University’s vice president, Professor Rie AKAMATSU, Professor Emeritus Yoko FUJIWARA, and Project Professor Chinatsu KASAMATSU participated to the “International Conference on Sustainable Green Diets to Save the World” held at Taipei Medical University(TMU) in Taipei, on October 28th, 2023.

After welcome remarks by vice-president Lusia Shu-Ying Chang (Professor of Spanish), the chairperson, Professor Emeritus Yoko FUJIWARA of Ochanomizu University, took the stage and introduced the first speaker, vice-president Rie AKAMATSU of Ochanomizu University.

Professor AKAMATSU's lecture was titled 'The Health of the Earth and Ours Through Dietary Lifestyle', in which she presented research result on food groups and nitrogen footprints, and the results of a study on food loss and overeating when eating out.

The following lecture, 'How can Umami and Koku Contribute to Sustainable Diet' by Project Professor Chinatsu KASAMATSU, introduced the fact that foods which have low environmental impacts are unfamiliar to and less preferred by public, and that Umami and Koku play the important role to enrich taste. 

The second half of the session was chaired by Professor Jane C-J Chao, Taipei Medical University. Professor Sean-S-H Lin gave a lecture titled 'Relationship Between Instrumental Analysis and Sensory Evaluation in Texture Evaluation for Commercially Packaged Foods". 

Associate Professor Yu-Chen Hou then spoke on 'Potential Health Risks of Dietary Pesticide Exposure', lecturing on the relationship between pesticide use and chronic diseases, as well as health hazards and how to remove pesticide residues from food.  

The final speaker was Shen Sung, a graduate of the Taipei Medical University and a registered dietitian who established Dietician's Kitchen in Taipei City. She introduced how to make a 'green latte' as a desirable nutritional intake for the elderly and presented the benefits and evidence from various aspects. 

In his closing remarks, Professor Dean Rong-Hong Hsieh of TMU expressed his anticipation for the upcoming collaboration.

The day of the event saw green diet lunches supervised by Registered Dietitian Shen Sung, cooked on campus, and served to all participants. The warming hospitality of the students from the department of nutrition impressed approximate 50 participants who attended the event.
